Dear Kath,
Most taros (Colocasia esculenta) have leaf blades that can be eaten after cooking (the leaf stems can also be peeled and eaten - but that is another story). Any corm you find in the market is likely to be good, if you can grow the plant in a warm, hot, well-watered and well fertilised place over summer. It is a good idea to get a plant that someone else knows is good. If the owner of the shop you buy from is anything but European, and it is a small owerb-operated vege shop, then there is a good chance that the owner will know if the taro they sell is a good leaf variety.
