 Subject: Harvest taro soon (now or April-May)

If you have been growing taro over the summer just ending, now is the time to begin thinking about harvesting taro. The corms taste best when fresh. Wait until the plants just naturally start falling down. This means they won't be adding anything more to their corms (they stop growing because the days are getting short, and temperatures are dropping). The youngest, one-season-old corms may be small, but they will be the easiest to cook, and have a smooth texture. Good ones will release a white milky (starchy) sap when cut open.
